Saffron is used as a spice and colouring agent in many kinds of food. It is a particularly precious and valuable spice; its saffron’s delicate flavour and fascinating fragrance that can add elegance to a dish, while its world renowned colouring qualities mean that it is used as a natural dye in candies, confectionary, beverages, ice creams and many other sweet and savoury dishes. In Persian cooking, ground saffron is regularly used to give rice a beautiful deep yellow colour, as well as adding a delicate aroma to it.
